Salsa Baked Cheese - Rick Bayless
Ingredients

1/4 c pine nuts or coarsely chopped walnuts/pecans
4 oz log goat cheese
3 oz package cream cheese - softened
1 c Frontera Jalapeņo Salsa, Roasted Tomato Salsa or Habanero Salsa
1 T fresh cilantro- chopped, for garnish

Cooking Instructions

Preheat oven to 350F.

Spread nuts on a baking sheet. Place in oven. Toast until lightly browned - 7 or 8 minutes. Remove. Slide into a medium-size bowl.

Add cheeses to the bowl. Mix thoroughly with nuts. Scoop into the center of an ovenproof baking dish. Form mixture into a 5-inch-diameter disc. Spoon salsa over cheese. Bake until heated - 10 - 15 minutes. Sprinkle with cilantro. Serve with crackers, chunks of bread or toasted croutons.

Serves 4 - 6 as an appetizer.
