4 c tomatoes – chopped
2 c dried black beans - cooked in salted water until tender. Cooled (about 2 c)
1 c red onions – diced
1 fresh jalapeno, seeded + diced
1/2 c fresh cilantro leaves – chopped
1 T fresh parsley – chopped
1 T garlic - chopped
Salt + pepper
6 T fresh lime juice
1 T extra-virgin olive oil
Crispy corn tortilla chips
Cooking Instructions
Combine 1st 7 ingredients in a mixing bowl. Season with salt + pepper. Add lime juice + olive oil. Mix well. Spoon into a serving bowl. Serve with the chips.
