4 ripe tomatoes - seeded + diced
4 cloves garlic - finely diced/sliced
1/2 c olive oil
1 T balsamic vinegar
1/4 t red pepper flakes
1/4 c fresh basil - chiffonade
Salt
1 lb penne - cooked al dente
1/2 lb fresh mozzarella - cubed
Cooking Instructions
In a large serving bowl, combine the tomatoes, garlic, olive oil, vinegar, red pepper flakes + basil. Season with salt. Add the pasta + mozzarella. Stir to mix.
