Chocolate Red Wine Cupcakes w/ Mascarpone Icing - Mario B + Rachel Ray
Ingredients
½ c unsweetened cocoa powder
4 oz choc broken into pieces
½ c boiling water
2 sticks butter
1.5 c granulated sugar
4 large eggs
1 1/4c flour
1 ½ t baking powder
1 t salt
½ c medium to full bodied red wine ( ie., cannonau)
2 8oz containers mascarpone
2 c confectioners sugar
Cooking Instructions
350 oven - preheated
Line 2 muffin tins with cupcake papers
Combine cocoa powder + choc pieces. Whisk in boiling water until all is melted.
Cream butter + sugar in another bowl. Beat in eggs 1 at a time. Sift in flour, baking powder, salt. Alternating add choc mixture + wine into dry ingredients until totally mixed.
Fill cupcake papers 3/4 full. Bake about 20 mins.
Icing: Lightly beat mascarpone cheese. Add confectioners sugar until creamy. Ice cupcakes + top with red grape half for garnish.
