Chocolate curls:
Temp of chocolate important to make curls.
Microwave chocolate chunk or piece at 30% power for 30 seconds to 1 minute.
Pull veggie peeler along the chocolate bar putting pressure on the peeler for curls.
Seized chocolate - grainy appearance to chocolate shows either overheated chocolate or drops of water got into chocolate.
Add butter or warm water by tablespoon until the chocolate can be whisked back to a smooth + shiny sheen.
Microwave chocolate melting:
Smooth + shiny sheen means perfectedly melted chocolate.
Combine chocolate with butter in recipe. Melt at 50% power in 30 second intervals. Stir between each heating till chocolate is smooth and shiny.
Chopped chocolate: for icing, garnish
Use serrated knife to cut the chocolate block or chunk.
