1 Wind & Willow Baked Potato Soup Mix
4 c water
4 c cubed french bread
1 lb sausage - cooked + drained
6 eggs
1½ c cheddar cheese
Cooking Instructions
Preheat oven to 350. Spray 9"x13" pan with cooking spray.
Add soup mix to water. Heat to a boil, then reduce to simmer for 15 - 20 mins. Stir often + set aside to cool.
Toss bread cubes into prepared pan. Top with sausage.
Whisk eggs together adding a little of the hot soup mixture. {Don’t add all soup mixture or eggs will cook} After mixing the small amount in, gradually add the eggs into the rest of the potato soup mixture. Then pour over sausage + bread.
Cover casserole with foil + bake 25 mins. Remove foil. Top with cheese + bake until cheese melted + casserole set. Approx 10 - 15 mins.
Zip it up: Add garlic + onions. Fresh mushrooms or canned. Little dill, chipotle or cayenne pepper.
Serve: with salsa on the side. Try our portabella mushroom salsa. Or the key lime. Slice up a few peppers + lay them on the side of each plate. A unique twist - place a few of the flavored pickled rooms we carry on each plate.
